What's Cookin at Nana's? Carrot Souffle.


Serve this sweet carrot souffle and your family will be impressed and actually eat a vegetable.

Carrot Souffle


1 pound carrots, peeled and cut into chunks

1/2 cup butter, diced

3 eggs

1 cup sugar

3 Tablespoons flour

1 teaspoon baking powder

1 teaspoon vanilla

pinch of salt


Boil carrots until very tender.  Drain.  Cool.


Place all ingredients into a food processor and mix well, scraping sides to incorporate everything nicely.


Pour into a greased 8 by 8 casserole or baking pan.

Bake at 350 degrees for 45-60 minutes (lightly browned on edges).
