The UNM Duck Pond is about a 10 minute drive from my house.

WEATHER UPDATE:

May is still happening. Its possible to see
beauty each day here.

The weather has been cool. Most days have

been perfect enough for morning ballooning.

Early morning, I see the balloons drifting over
west mesa. That's a nice morning site to see.

 

05/15/15- Today's weather.

Its possible to get some rain.
Cloudy, windy and cool.

up yet and Im happy to be warm.
It was a bit chilly this morning.

Outdoors Yard Updates

I put new flowers in the hanging planters on the front porch. Recently, the porch received a new ceiling fan with fancy lights. Also, there are new patio chairs at the BBQ patio area. The old patio chairs were pretty beat up. Things are looking good at this little house.







A Great Activity

Hike the trails at the Sandia Crest, at an elevation of over 10,000 feet, you will experience cool mountain air and spectacular bird’s-eye views of the rocky cliffs and ridges and possibly see my house. I love hiking. Another one of my favorite places to stroll is at the Rio Grande Nature Center.

Possible Evil People.

Roma tomatoes are on sale this month and so I have been enjoying the salsa canning projects. I usually take two hours out of the week to make about 12 jars of spicy tomato salsa to give to friends when they come over. I know its good salsa because I taste test each batch and my friends and I snack on the homemade salsa pretty frequently. Anyways, these canning projects had me really thinking about Aunt Bee and the famous Aunt Bee pickle episode from The Andy Griffith Show. I know, Im weird like that. But seriously, wouldn't Aunt Bee taste test her pickles before entering them into a pickle contest? This only leaves me to believe that the writers of that pickle episode wanted us to think that sweet Aunt Bee was evil and knew her pickles were terrible. Its possible. LOL.

I got some good pictures of the the "Pet Crew", Missy, Tubbs, Tuck and Wheezy. 

I love my pets and they are awesome. The pets are all doing great!

Spaghetti Squash Boats
Its possible to make a healthy meal that tastes really good. This week, you will find great sales on tomatoes, onions and spaghetti squash. It just happens that those three vegetable go great together.

 

These spaghetti squash boats are amazing in flavor and very easy to make. For extra flavor goodness top them with some  vegan mozzarella cheese. I just cut the spaghetti squash into halves, clean out the seeds, season each half with garlic salt and pepper, fill with cooked tomatoes ( mushrooms would be good) and marinara sauce, add a cup of water to the bottom of the bake ware dish and bake the boats in a 375* oven for 30-35 minutes. You could use the microwave and bake the boats for 20 - 25 minutes. This is a very nice meal for lunch or dinner that is very satisfying. Serve with a side salad and fat free whole wheat bread.
